Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tbsp melted butter
- 1 cup fresh or frozen blueberries
- Butter or oil for cooking
Step-by-Step Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the buttermilk, milk, egg, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy. Gently fold in the blueberries.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes, until golden brown and cooked through.
