Vegetable Stir-Fry with Tofu

Ingredients
- 1 block firm tofu, drained and cubed
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1 zucchini, sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
- Cooked rice for serving
- Sesame seeds for garnish (optional)
Step-by-Step Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, sauté for 1 minute until fragrant.
- Add the bell peppers, broccoli, carrot, and zucchini. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
- Return the tofu to the skillet and stir to combine with the vegetables.
- In a small bowl, whisk together the soy sauce, hoisin sauce, and rice vinegar. Pour over the tofu and vegetables.
- If a thicker sauce is desired, add the cornstarch mixture to the skillet and stir until the sauce has thickened.
- Serve hot over cooked rice and garnish with sesame seeds if desired.
