Vegetable Lasagna

Brief Description

A hearty and delicious vegetable lasagna layered with tender vegetables, creamy ricotta, and gooey mozzarella cheese.

Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Step-by-Step Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the garlic, zucchini, yellow squash, bell pepper, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes. Season with salt and pepper to taste.
  4. In a medium bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese. Mix well.
  5. Spread a thin layer of marinara sauce at the bottom of a 9×13 inch baking dish.
  6. Layer 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then add half of the sautéed vegetables. Top with 1/3 of the mozzarella cheese and another layer of marinara sauce.
  7. Repeat the layers: 3 lasagna noodles, remaining ricotta mixture, remaining vegetables, 1/3 of the mozzarella cheese, and marinara sauce.
  8. Finish with the last 3 lasagna noodles, remaining marinara sauce, and the rest of the mozzarella and Parmesan cheese.
  9. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Let the lasagna rest for 10 minutes before slicing and serving. Garnish with fresh basil if desired.
