Grilled Cheese and Tomato Soup

Ingredients
For the Grilled Cheese:
- 4 slices of bread
- 2 cups shredded cheddar cheese
- 2 tbsp butter
For the Tomato Soup:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tsp dried basil
- Salt and pepper to taste
Step-by-Step Instructions
- For the Tomato Soup:
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until softened, about 5 minutes.
- Add the crushed tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the heavy cream and dried basil. Season with salt and pepper to taste.
- Use an immersion blender to blend the soup until smooth. Keep warm on low heat.
- For the Grilled Cheese:
- Butter one side of each slice of bread.
- Heat a skillet over medium heat. Place one slice of bread, butter side down, in the skillet. Add 1 cup of shredded cheese on top.
- Place the second slice of bread, butter side up, on top of the cheese. Cook until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
- Repeat with the remaining bread and cheese.
- Serve the grilled cheese sandwiches hot with the tomato soup on the side.
