Ingredients
For the cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup whole milk
For the buttercream frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tsp vanilla extract
- 2-3 tbsp heavy cream or milk
- Food coloring (optional)
Step-by-Step Instructions
- Preheat the oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
For the buttercream frosting: 7. In a large bowl, beat the butter until creamy. Gradually add the powdered sugar, beating until smooth. 8. Add the vanilla extract and 2 tablespoons of heavy cream or milk. Beat on high until light and fluffy, adding more cream or milk as needed to reach the desired consistency. 9. If using food coloring, add a few drops and mix until combined. 10. Pipe or spread the frosting onto the cooled cupcakes.
