Vegetable Lasagna
Brief Description
A hearty and delicious vegetable lasagna layered with tender vegetables, creamy ricotta, and gooey mozzarella cheese.
Ingredients
- 9 lasagna noodles
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- 2 cups ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Step-by-Step Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the garlic, zucchini, yellow squash, bell pepper, and mushrooms. Sauté until the vegetables are tender, about 5-7 minutes. Season with salt and pepper to taste.
- In a medium bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese. Mix well.
- Spread a thin layer of marinara sauce at the bottom of a 9×13 inch baking dish.
- Layer 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, then add half of the sautéed vegetables. Top with 1/3 of the mozzarella cheese and another layer of marinara sauce.
- Repeat the layers: 3 lasagna noodles, remaining ricotta mixture, remaining vegetables, 1/3 of the mozzarella cheese, and marinara sauce.
- Finish with the last 3 lasagna noodles, remaining marinara sauce, and the rest of the mozzarella and Parmesan cheese.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the lasagna rest for 10 minutes before slicing and serving. Garnish with fresh basil if desired.
